Tales of a Provo weekend

Saturday is a special day. It's the day I hung out with my awesome friend Shawn all day! We had a great time. We went on a lunch date to our favorite place...Chen's! (Summer bucket list #11) Then played mini golf (fo' free yo). Then got the best snow cones around town (Hokulia). Then went to Seven Peaks Waterpark and read books (fo' free yo). Lets just say...it was a bomb awesome day.


Monday I went on a hike with some of the coolest kids around. (Summer bucket list #1) We hiked down in Spanish Fork to the Fifth Water Hot Springs! (Summer bucket list #73) There were also cold springs. It was so much fun to hike, play around in the water, and become one with MN (mother nature, check the video if you're confused). But for reals. It was so much fun. Then I went to a bbq in the canyon where we threw around a frisbee and ate delicious food. (Summer bucket list #29) And I finished the day with some hot tub time!

My friends are so cool. But for reals. Check us out!

Homemade pancakes

So for chocolate day I made everyone in the office chocolate chip pancakes! And got a million compliments, so I wanted to share the awesome recipe with y'all.

It's one of the only two recipes (the other one is a small batch of pancakes for two people--I'll share later) for pancakes I'll use. My roommates and I used to make pancakes after our early morning temple trip each week and this became our favorite recipe (we tried soo many).

HOMEMADE PANCAKES: (because you can really do that)

Ingredients
2 cups all-purpose flour
2 1/2 teaspoons baking powder
3 tablespoons granulated sugar
1/2 teaspoon salt (i actually left this out, on accident, and they were totally delicious...)
2 large eggs
1 1/2 to 1 3/4 cups milk
2 tablespoons melted butter

Directions
Mix flour, baking powder, sugar, and salt (if you choose to use it..ha!). In a separate bowl, whisk together the eggs and 1 1/2 cups of milk. Spoon the flour mixture in, stirring until smooth. Mix in the melted butter. If the batter seems too think, add a little more milk (I always have to add a little pour or two). Cook on a hot, greased pan/griddle. Cook until bubble, a little dry around the edges, and lightly browned on the bottom. Flip and brown the other side. Serves 4-5 people.

For chocolate chip pancakes: You'll need...well as many chocolate chips as you would like! I used about a cup, but I also doubled the recipe. So it doesn't take too many. I like to just add them to each individual pancake as I pour them on the pan/griddle. It's a little more work (hardly at all), but that way the chocolate chips don't sink to the bottom of the batter. So each and every pancake gets plenty of chocolate chips!!

Serve with PEANUT BUTTER and a tiny bit of syrup (my favorite pancake topping!), or whatever you prefer.

Chocolate makes friends

Yesterday was national chocolate chip day, and my work had been looking for a reason to celebrate...so naturally we had to have a par-tay. We had SO MUCH CHOCOLATE.



Here's all the chocolate things we had:
chocolate chip pancakes
chocolate milk
nutella
chocolate chip cookies
dark chocolate cherry bread pudding
chocolate cheesecake bars
caramel brownies
chocolate-butterscotch haystacks
mini cadbury eggs
chocolate fountain (with graham crackers, animal crackers, marshmallows, pretzels, and strawberries)
white chocolate chip snickerdoodles
chocolate cake
chips ahoy cookies
dark chocolate truffles

Lets  just say it was a good day. It was seriously kinda really super awesome. Go have a chocolate party. Because chocolate makes friends. We had so many people that we have seen but never met ask if they could share in our chocolatey-goodness. It was so fun to finally meet all these people from our office.

Moral of the story: chocolate makes friends. So go have a chocolate party. RIGHT NOW! Stop reading this now. Okay I'll help you stop reading by not writing anymore.

10 things

I found this challenge to blog everyday of May. I think it's a pretty cool challenge and I really like some of the post ideas/prompts. So maybe I'll do a few here and there. Today I'm participating in her challenge.



10 THINGS THAT MAKE ME REALLY HAPPY:

1. ice cream
But seriously guys. I love ice cream. BYU's Creamery makes the best flavor known to man...Graham Canyon!

2. facetime
I love facetiming my niece, nephew, siblings, and parents.

3. journaling
Oh man, I love me a good journal. I like to emphasize quotes and phrases in my journals by writing them differently or adding color. And here's some journal inspiration!

4. dresses with pockets
They're the best. we all know it.

5. laying on a blanket in the grass outside reading a book
I've been doing this lately, and it's amazing.

6. receiving letters
So old school, yet so exciting. For some of my friends (they're on missions for our church) this is the only way I hear from them and it's just so exciting to check the mail and have a wonderful letter waiting there for you. You never know quite when they're going to come. I love letters!

7. water bottles
It's such a random thing to love, but holy cow. I love me a good reusable water bottle. I have more than any one person should have (okay, it's not that bad... but I have at least three.)

8. Texas
Yes, I'm soooo proud of Texas and proud to be a Texan. If you need proof, or a good laugh at how ridiculous us Texan's are, check out my pinterest board. Mostly it makes me happy simply because it is home. It's where I grew up and figured out who I am. It will always hold a special place in my heart.

9. making stuff
Whether it be a craft, something I've sewn, or baked I love the accomplishment in making something wonderful. And love laughing at when I epically fail at making something. Pinterest fail anyone?

10. the gospel of Jesus Christ
My testimony of Christ brings me so much joy and comfort. I love the Book of Mormon, Bible and other scriptures too. I am so grateful to know of the atonement of Christ. I am proud to be a member of the Church of Jesus Christ of Latter-day Saints. I know the Christ suffered for my sins, so that I can return to live with my Heavenly Father again one day.

Dear apartment 5

Two of my best friends moved away, but before they left we did some hoodrat stuff! (If you haven't ever heard of that, go watch this video. NOW. You'll thank me later.) It was an awesome "Madi and the Boys" night. Which included: going to a nickel arcade, longboarding in the courtyard, watching Psych, and a late night run to get Jarrito's soda.

We rarely actually took pictures, despite how often we hung out (probs around 4 nights a week...at least...) But finally we got our friendship documented!! It just took like 8 months to get there. :)



N & D (the two on the far left) are both gone for the summer. It's quite sad. But E and I are going to have a bombing summer here in Provo and can't wait for them to get back!

Hey Apt 5, thanks for being awesome friends. I've loved these last two semesters hanging out with y'all all the time. Thanks for providing me with a second home (I was almost there more than at my own apartment...). Can't wait for more great times when y'all get back and we can all be reunited!
